As Executive Chef of Rancho Valencia Resort and Spa in Rancho Santa Fe, Calif., Judd Canepari brings passion and the experience of culinary excellence to this
renowned Relais & Chateaux property. In his position, Canepari heads Rancho Valencia's culinary team and oversees all food and catering operations.
In the early 1990's at the Long Shore Grill in Long Island, NY, Canepari worked side by side with Allan De Coster, Belgium ambassador chef to the United
States. This experience proved to be one of the most valuable in his career because he not only acquired a passion for food and wine, but also a fiery passion
for exciting people through memorable food experiences.
From there, Canepari opened Personal Chef's Cooking School in La Jolla, Calif., where cooking techniques were taught to culinary professionals and cooking
enthusiasts. Canepari also established Edible Entertainment, which he still operates, where he provides coaching and instruction to aspiring culinary
stars - both professional and amateur - and teaches the art of preparing gourmet cuisine in an informative and entertaining way in front of an audience.
Most recently, Canepari worked as a "Chef to the Stars," often living in private celebrity homes and serving as their personal chef.
An avid traveler, it is Canepari's philosophy that a great chef must understand the origins and heritage of the dishes he or she prepares. Canepari borrows
from the different cultures he experiences to infuse his dishes with authenticity.
Raised in New Milford, Conn., Canepari, a third-generation American of Italian immigrants from Tuscany, trained at Johnson & Whales University of Culinary Arts in Rhode Island. He is married, has one son and one daughter and is a family man at heart with strong ties to his Italian heritage.
