Rancho Valencia Hires Master Court Sommelier Jayson Knack as Director of Restaurants
RANCHO SANTA FE, CA (March 2012) – Rancho Valencia, Rancho Santa Fe’s 45-acre luxury resort, is pleased to announce Jayson Knack as the newest member of its talented food and beverage team. A Master Court Sommelier and seasoned wine expert, Knack brings more than 10 years of experience managing fine dining restaurants to his position as the Director of Restaurants for the premier destination resort and spa in San Diego.
Knack’s arrival highlights a major initiative of the luxury resort’s current $20 million renovation- the re-conception of the property’s food and beverage programming. Over the duration of the renovation, he will lead a series of in-house training seminars dedicated to preparing staff to guide each of the resort’s guests in a knowledgeable and passionate way. Rancho Valencia’s food and beverage program will emphasize a “hands-on” approach through wine, beer and spirit pairings, blendings and blind tastings.

Rancho Valencia’s beverage program will offer world-class selection and service paired with unique and interactive experiences. The distinct wine list will be sourced from micro-producers in California, France, Italy and Spain as well as sourced from Canada, Mexico, Tasmania, South Africa and Turkey. Wine offerings will be available to guests via Ipads with extensive tasting notes, preselected pairings and searchable by varietal, flavor profile, production level and price. Also available will be a vast selection of craft tequilas and local San Diego brews.
The resort’s continued commitment to green initiatives will be seen throughout its beverage programming, including bottled water, which will utilize local sources. Additionally, Rancho Valencia will be the first luxury resort in San Diego to serve wine packaged in re-usable keg containers.
Prior to joining Rancho Valencia, Knack was the owner of Decanter Restaurant & Wine Lounge, an acclaimed fine dining establishment boasting a wine program that offered 500 selections available by the taste, where he oversaw all aspects of restaurant operations as general manager and sommelier. Knack has also held the position of Director of Restaurants with Starwood Resorts and San Francisco’s Hyatt Regency Hotel, as well as worked for notable California restaurants including San Mateo’s Viognier, San Francisco’s La Folie and La Jolla’s NINE-TEN.
